La Marzocco · Dual boilerGS3 AV

A Florence-built, dual-boiler prosumer machine carrying the saturated group and commercial electronics of the Strada into a single-group home footprint. The AV version trades the MP's paddle-driven flow control for push-button volumetric repeatability and a programmable pre-infusion sequence.

The short version

The GS3 AV is a genuinely commercial-grade machine squeezed into a kitchen counter footprint, and it delivers the thermal stability and steam power to prove it.

The price of admission is real — both financially and in the time required to dial it in and keep it maintained.

Why people buy it

  • 3.5 L dedicated steam boiler produces full cafe-quality steam continuously, handling multiple back-to-back milk drinks without recovery lag
  • Saturated group head inherits commercial Strada architecture, delivering benchmark thermal stability and shot-to-shot consistency

Why they don’t

  • Needs 15–20 minutes to reach full thermal stability — not a grab-and-go morning machine
The full tally
  • 3.5 L dedicated steam boiler produces full cafe-quality steam continuously, handling multiple back-to-back milk drinks without recovery lag
  • Saturated group head inherits commercial Strada architecture, delivering benchmark thermal stability and shot-to-shot consistency
  • Volumetric dosing with programmable pre-infusion per button makes repeatability accessible once dialed in
  • Rotary pump enables plumb-in operation and is dramatically quieter than vibratory alternatives
  • Needs 15–20 minutes to reach full thermal stability — not a grab-and-go morning machine
  • The AV's electronic pre-infusion is fixed-pattern and not flow-profiled; serious profiling enthusiasts will want the MP sibling or a Decent
  • Price-to-footprint ratio is steep: it occupies similar counter space to cheaper dual boilers at nearly twice the cost

What the community knows

Years of owner threads, distilled — the default recommendation in its bracket.

Commercial reliability and 18+ year home proven track record earn serious barista respect; flow profiling mastery requirement and premium price keep it expert-only — rewards committed technique over forgiveness, not a beginner machine.

Worth knowing before you buy — Most owners who struggle wish they'd invested the gap in their grinder instead; the GS3 AV will expose every weak link upstream.

It's simple to get reliably great espresso, but you miss out on one of this machine's best features, flow rate profiling.

Living with it

The part spec sheets skip: counter space, upkeep, and what owners learn later.

drag to look around
GS3 AV claims 40 × 53 cm of a standard 60 cm counter and stands 35.5 cm tall 9.5 cm to spare under standard 45 cm uppers. The small block is a mug; the counter grid is 10 cm.

The honest note — Most AV owners who outgrow this machine are chasing flow profiling, not shot quality — the natural next step is the GS3 MP sibling or a Decent Espresso DE1Pro. Few home setups genuinely surpass what the GS3 AV can produce.

Before it arrives

What completes this machine — the faded pieces can wait.

Water filter / softener Plumbed-in machines need inline filtration to keep scale out of the boiler — it is cheaper than a repair.

  • Water filter / softener — Plumbed-in machines need inline filtration to keep scale out of the boiler — it is cheaper than a repair.
  • Descaler & backflush kit — Electric boilers scale up and grouts gunk up — a descaler plus backflush routine is what keeps the machine alive for a decade.
  • Coffee scale with timer — Espresso is a ratio. A 0.1g scale with a built-in timer is the single biggest consistency upgrade for any manual machine.
  • Knock box — Somewhere to bang the spent puck that is not your kitchen bin.
  • Calibrated tamper — The bundled tamper is usually an afterthought; a fitted, calibrated one makes prep repeatable.
  • WDT distribution tool — Breaks up clumps before tamping — a cheap fix for channeling on any portafilter machine.
  • Espresso cups & glassware — Proper demitasse and latte glasses keep the drink hot and look the part.

Feed it right

Week one is dial-in — and stale beans will lose it.

Coffee more than a few weeks past roast won’t extract predictably, and a new machine gets blamed for it. A machine in this class will show you the difference between roast dates — it deserves beans that change week to week.

No proper grinder yet? Sort that first — it decides more of the cup than the machine does. We ship whole bean, roast-dated, timed so it lands fresh the week your burrs do.

Roasted to order, daily, in Ajax, Ontario · ships Canada-wide. We’re the roastery behind this database — measuring the machines is how we make sure the coffee gets a fair shot.

Common questions

What is the difference between the GS3 AV and GS3 MP?

The AV (auto-volumetric) uses an electronic package to program and repeat a set water volume per shot, with pre-infusion programmable per button. The MP (manual paddle) replaces the buttons with a conical valve paddle that lets the barista manually control water flow and pressure throughout the shot — enabling true flow profiling but requiring considerably more skill and consistency to use well.

Can the GS3 AV be plumbed directly to a water line?

Yes. The machine ships with a 2.5 L internal reservoir but includes a plumb-in kit option. The commercial-grade rotary pump handles direct-line pressure without modification.

How long does the GS3 AV take to be ready to brew?

The machine reaches brew temperature in roughly 15 minutes, but full thermal stability across the saturated group — where shot quality is most consistent — takes closer to 20 minutes from a cold start.

Does the GS3 AV support the La Marzocco Home app?

Yes. All current GS3 AV units ship with an IoT board. The app provides remote on/off/standby control, brew and steam boiler temperature monitoring and adjustment, pre-infusion timing, shot volume programming, and a cumulative shot counter.

What grinder does the GS3 AV deserve?

At minimum a quality midrange flat-burr grinder (e.g., Eureka Mignon Specialita, Baratza Vario+). The machine's thermal stability and commercial-grade group head will reveal grinder inconsistencies that cheaper burr sets cannot resolve. A single-dose or premium grinder is the natural pairing for anyone trying to extract the machine's full potential.
