Wild Ember is a singular declaration from one of Ethiopia's most storied wild-grown origins — a dry process lot from Dambi Uddo town that carries the full force of the Guji highlands, unfiltered. Dambi Uddo sits within Odo Shakiso Woreda, deep in the Guji Zone of Ethiopia's Oromia Region — the ancestral homeland of Arabica coffee. Here, smallholder farms are scattered across volcanic forest slopes between 1,850 and 2,200 meters above sea level, where untouched forest soil requires no added fertilizer and the default is effectively organic. Each contributing farmer tends only a few hundred coffee trees, intercropped among false banana, subsistence vegetables, and the wild understory of one of the world's oldest coffee-growing landscapes. Hundreds of these farmers deliver their hand-picked red cherries to the privately run mill at Dambi Uddo town, where the lot is assembled with the precision and care that earned it a Grade 1 classification — Ethiopia's highest quality designation. The Dambi Uddo mill operates at an intimate scale that makes this kind of traceability possible. Where larger commodity mills aggregate and anonymize, Dambi Uddo has positioned itself as a quality-first operation for the Guji Zone's western smallholder community — a region that only recently emerged from the shadow of its more famous neighbors Yirgacheffe and Sidama to claim its own distinct identity on the world specialty stage. Sweet Maria's acquired this lot through a direct Farm Gate relationship, ensuring full price transparency from tree to export. Wild Ember is processed using Ethiopia's oldest and most expressive method: the full natural, or dry process. Ripe red cherries are hand-selected at the mill's intake, floated to remove any underweight fruit, then spread in a single layer across raised drying beds where they dry whole under the Guji sun for weeks. The cherry remains intact throughout — bean, pulp, mucilage and skin drying together — allowing the bean to absorb the full concentrated sugars of the fruit as moisture gradually releases. Workers turn the beds continuously to ensure even drying, monitored until the lot reaches its target moisture level. The result is a coffee that carries the terroir of the Guji highlands and the intensity of the fruit itself into every roasted gram. The cup opens with the hallmark of great Guji naturals: a deep, immediate blueberry that reads more like fresh-pressed berry juice than fruit suggestion. As it develops, natural dried stone fruits emerge — apricot, dark plum — shifting toward brighter marmalade acidity with a twist of lime at the rim. As the cup cools, aromatic complexity arrives: chai spice, delicate florals, the quiet richness of dark honey.
