For generations, families in Cau Dat have tended to Arabica coffee trees with a kind of quiet devotion that’s hard to find anywhere else. They don’t rush the process. Every cherry is picked by hand, only when perfectly ripe. And depending on the lot, they might sun-dry the beans naturally, or use washed or honey processing methods to coax out different layers of flavor. We roast those beans fresh to order in small batches right here in Ajax, Ontario. Nothing sits on a shelf waiting to be bought.
